A veteran of the Las Vegas dining scene and visionary culinary artist, Chef Bruno Morabito honed his award-winning skills at various world-class restaurants all around Las Vegas before taking his considerable talents to Westgate Las Vegas Resort & Casino as Chef de Cuisine at the immensely popular onsite eatery, Sid’s Café. Known for his eclectic take on traditional comfort food, Chef Bruno truly found his home at Sid’s Café, which specializes in creative approaches to home-style cooking featuring large plates of meticulously prepared food and attentive customer service.
Morabito, who brings a wealth of culinary experience to Westgate Las Vegas Resort & Casino, began his love for cooking while a teenager growing up in Rochester, New York. After high school, he attended culinary school in Ontario, Canada, and became exposed to a variety of different cultures and cooking styles. Chef Bruno moved to Las Vegas in 2000 where his culinary career quickly took off. He worked at the now-defunct Lutèce, a French restaurant that was located in The Grand Canal Shoppes at the Venetian Resort Hotel Casino. Morabito then served as Sous Chef at Aureole in the Mandalay Bay Resort & Casino starting in 2002 before moving to Thomas Keller’s Bouchon, an award-winning French bistro at The Venetian, as Chef de Partie in 2003. At Bouchon, Morabito was soon promoted to Sous Chef and was instrumental in bringing breakfast and brunch to the eatery (he even introduced Chicken and Waffles to the menu and it soon became one of the establishment’s most popular dishes). Forbes Travel Magazine named Morabito’s brunch menu at Bouchon as the “Best Brunch in Las Vegas.” The critically acclaimed brunch menu was soon added to all of Keller’s Bouchon locations. In fact, Morabito has won numerous awards for breakfast and brunch throughout his storied career and has been dubbed the “Master of Brunch” by none other than the Vegas Unfiltered Blog.
In 2014, Morabito was recruited by Italian-born celebrity chef, television personality and bestselling cookbook author Giada De Laurentiis to be Chef de Cuisine at her first-ever Las Vegas restaurant, GIADA, a trendy eatery located in The Cromwell Las Vegas. Chef Bruno set about creating a breakfast and brunch menu – adding his signature Chicken and Waffles to the menu, of course, but giving it an Italian twist. GIADA captured “Best Brunch in Las Vegas” award honors from the Las Vegas Review-Journal in 2016. After joining Sid’s Café in Westgate Las Vegas as Chef de Cuisine in December 2016, Morabito set about to immediately launch new menu items and today Sid’s boasts such unique delicacies as Cinnamon Dough Waffles, Cornflake French Toast with Bananas Foster Sauce, Jumbo Cast Iron Baked Cinnamon Roll, BBQ Brisket Skillet, Fried Chicken & Waffle “BLT”, Apple Fritter Pancakes and much more. The lunch, dinner and late-night menu at Sid’s Café features a diverse array of entrees, including Buffalo Chicken Wings, Loaded Southwest Nachos, Seared Salmon, Fish & Chips, New England Lobster Roll, Southern Fried Chicken, Home-Style Turkey Dinner, New York Steak Dinner, Fettuccini Alfredo and Tuscan Grilled Chicken, among other options.
Morabito enjoys frequently strolling through the dining room at Sid’s Café and interacting with customers to check on their dining experience, as well as discuss all of the new and exciting menu items at the eatery, which is located in the heart of Westgate Las Vegas Resort & Casino. “I love to connect with people and chat about their meals and experience,” said Chef Bruno. “By creating memories through food you create great relationships that people relish and always have fond memories of their experience.” Morabito also makes frequent appearances doing brunch cooking segments on local TV networks in Las Vegas. When Chef Bruno is not in the kitchen of Sid’s Café, he can usually be found at the horse racing track, at a Rolling Stones concert or just hanging out with his twin daughters.
First opened in December 2014, Sid’s Café joins an ever-growing list of popular onsite restaurants at Westgate Las Vegas Resort & Casino such as Edge Steakhouse, Benihana, Bar Sake & Robata Grill, Fresco Italiano, Fresh Buffet, Silk Road Asian Bistro, Rikki Tiki Sushi, Drafts Sports Bar & Grill Express and several others. Sid’s Café was named in honor of Westgate founder David Siegel’s father, Sid Siegel, who loved Las Vegas and visited the “Entertainment Capital of the World” frequently. According to the restaurant’s slogan, “We treat everyone like a high roller.” TripAdvisor and Yelp reviews of Sid’s Café include the following plaudits: “great for breakfast,” “best customer service from a restaurant ever,” “large portions priced right” “service was superb and exceptionally friendly” and “one of the best places to eat breakfast in Vegas,” among many other positive reviews of the Las Vegas eatery.
