1. Mojave Margarita | Edge Steakhouse at Westgate Las Vegas Resort & Casino

Ingredients:

1 ½ ounces blanco tequila (the Westgate Way: use Don Julio)
½ ounce triple sec (the Westgate Way: use Cointreau)
¼ ounce apricot liqueur
¾ ounce freshly-squeezed lime juice
A dash of egg white
Prickly pear syrup
Pomegranate sugar (for rim of glass)

What says summer like a margarita on a hot day? For this refreshing take on a classic cocktail, grab a shaker and fill it with ice. Pour in the tequila, triple sec, apricot liqueur, and lime juice. Then add in a dash of egg whites for a foamy finish! Shake well and strain into a cocktail glass.

For a pop of color and fruity flavor, top drink with a few dashes of prickly pear syrup and add pomegranate sugar to the rim of the glass.

2. Long Way Down | Edge Steakhouse at Westgate Park City Resort & Spa

Ingredients:

1.5 ounces bourbon (the Westgate way: use High West American Prairie)
½ ounce blue agave (can be subbed with honey, hot water & brown sugar)
½ ounce lime juice
1 large, rock ice cube
Lime wedge for garnish

To compose this Western-inspired bourbon cocktail, simply mix together bourbon, blue agave, and lime juice. For a rustic yet elegant presentation, pour over a single ice cube in a rocks glass. Garnish with a fresh lime wedge and enjoy.

3. Classic Manhattan | Inspired by Westgate New York Grand Central

Ingredients:

2 ounces rye whiskey
1 ounce sweet vermouth
3-4 dashes Angostura bitters
Maraschino cherries for garnish

Believed to have been created in the City That Never Sleeps in the late 19th century, the Manhattan cocktail is simple, elegant, and delicious. Pour two parts rye whiskey and one-part sweet vermouth into a mixing glass, then add 3-4 dashes of Angostura bitters. Add in some ice, stir, then strain into your stemmed-glass of choice.

Garnish your drink with some skewered maraschino cherries or an orange peel, and pretend you’re sipping rooftop somewhere in Mid-Town.

4. Affogato | Villa Italiano Chophouse at Westgate Vacation Villas Resort

Ingredients:

1 scoop vanilla bean gelato or
1 ¼ ounce Frangelico liqueur (or Amaretto)
1 shot or about 3 tablespoons of espresso or black coffee

To create this decadent, Italian dessert cocktail, place a single scoop of vanilla bean gelato in a glass – martini glass preferred, but not required. Pour the Frangelico on top of the gelato, then immediately pour the espresso or coffee on top of that. As soon as you pour the hot coffee, it begins to melt the gelato and create a delicious foam. Eat & enjoy!

Remember to savor those last few sips of your melted concoction – they’re the perfect marriage of creamy gelato and sweet coffee, with a boozy, hazelnut kick from the Frangelico. Delizioso!

5. For the Kids: Key Lime Pie in a Cup | Pelican’s Bar & Grill at The Westgate Cocoa Beach Pier

Ingredients:

1 cup graham cracker crumbs
4 tablespoons unsalted butter
3 tablespoons sugar
¾ cup heavy whipping cream
1 teaspoon vanilla extract
14 ounces of sweet condensed milk
8 ounces of cream cheese
¾ cup key lime juice
Whipped cream & lime wedges for garnish

Your kids are sure to love this fun take on a quintessential Florida dessert! Start by mixing graham cracker crumbs, melted unsalted butter and sugar in a bowl, then divide 1 tablespoon of the mixture into cups to chill for 10 minutes.

Whisk together the heavy whipping cream and vanilla extract until stiff; beat in cream cheese and sweetened condensed milk, one at a time, into the mixture until smooth. Add in key lime juice and top the graham cracker crust with the mixture, refrigerating for two hours until firm. Serve up this tasty treat with whipped cream and limes as a garnish and dig in!
